arugula & prosciutto salad.

INGREDIENTS:

  • 1 cup arugula
  • 2 slices prosciutto
  • 1 T crumbled goat cheese
  • juice of 1 lemon wedge
  • 1T extra virgin olive oil
  • 1/2 clove minced garlic
  • salt and pepper to taste

Top the arugula with the goat cheese (I bought a log of goat cheese and took a little slice of it and crumbled it up in my fingers). Then roll up the prosciutto and slice it (or you can separate it into little pieces with your fingers).

In a small bowl mix the lemon juice from, olive oil, salt, and pepper together. This is probably one of my new favorite salad dressings. Super simple to whip together and really yummy. If you don’t want to deal with the fresh garlic, you can sprinkle some garlic powder instead.
