zoodle & italian sausage.

Last night I wasn’t too sure what to make for dinner. My boyfriend has two dinners that he loves to eat every week. Those two are Italian sausage and BLT’s. Needless to say, I am getting sick of them. I happened to throw some things together and it turned out pretty yummy. So here it is.

INGREDIENTS: (serves 2)

  • 4 zucchini’s, spiralized
  • 2T grated parmesan cheese
  • 2 cloves garlic, minced
  • 2T ghee
  • 4 Italian sausages
  • 1/2 package of cherry tomatoes
  • 1t parsley
  • 1/4t red pepper flakes
  • salt & pepper to taste

Directions:

cook the sausages in a pan or on the grill. I do not have a grill, so I will usually brown them in a pan and then add some water so that it fills up about halfway. This will cook the inside of the sausage without burning them.

Place some butter in another pan with the minced garlic. Once melted, add in the zoodles and get that cooking. I do not like mine super soft so I will keep a close watch on them until they are at desired tenderness. They do cook pretty quick. Add in the cherry tomatoes, parsley, red pepper flakes, parmesan cheese, salt, and pepper.

Slice the sausages once they are fully cooked and add to zoodle pan. Now it is ready to plate.
